One common mistake is not properly positioning the deflector plate. Make sure it is placed in the correct position, just above the firebox. If it’s too close to the fire, it can cause uneven cooking and flare-ups. On the other hand, if it’s too far away, it may not provide enough heat deflection. So instead, build up a nice hot fire and let the internal temperature slowly come up to 600 °F (316 °C). Hold that for 15 minutes before putting it out and letting it cool down.
